Walnut Pesto Pizza

I think I finally feel a bit better but I'm still pretty wiped out. I feel like I've been sick for, hunh well a week and it has been a week, so then never mind. Carry on.

It was a fantastic stormy weekend, lots of new snow to shovel (woot!), some wild wind, rain and more snow! We just hunkered down for the most part, we started a new braided rag rug from some jeans that were too far gone for repair and shoveled snow, the guys went sledding while I finished some computer work and all in all had great weekend.

The organizing of the house is moving right along, that's where the dead jeans for the rag rug came from, the "mending" basket aka where things go to get ignored. Our craft closet clean out is working pretty nice, the kids can get in and get what they want and as they told one grandma who stopped in to say hi "you can even WALK in to it!!" 

Coleen of Coleens Recipes asked me how I organized my tupperware style lids. I couldn't figure out how to explain it but I took a picture of it to show what I came up with:

I really need to make another one so it's not so stuffed. On the other hand I should probably match lids to containers and see what I have left, maybe I don't need another one...Guess I know what I'll be tackling today! Need any tips on getting it together in your house, ask away, maybe I can help.

Saturday we made homemade pizza for dinner and I came up with a pretty damn good combination for the adults in the house, pesto, feta, spinach and walnuts! On a super thin crust, it was so great. The kids had cheese and pepperoni, they love vegetables and all but ask them to eat them on their pizza and they might cry. So we enjoyed it without them and everyone was happy.

Walnut Pesto Pizza--oven 450˚

Dough for one Pizza, use your recipe
1/4 cup pesto
1 cup spinach, washed, dried and stems removed
1/2 cup feta crumbles
1/2 cup walnuts, toasted for 10 minutes in a dry frying pan makes them great or just let them toast in the oven while it's baking

pre-heat oven to 450˚
pat your dough out as thin as you like it on a baking stone or a pizza pan
pop it in the pre-heated oven on a middle rack for 6 minutes or so
assemble the other ingredients while it pre-bakes
after the 6 minutes remove it from the oven
spread on the pesto, snip the spinach evenly over the pesto, add the feta, then the walnuts
bake the pizza at 450˚ for 10 minutes or until it's done, depending on the crust thickness it could take up to 20 minutes



We have a lot of moose come through our yard or maybe it's the same moose with new babies every couple years, I don't know, but this is a first at our house: 
This house has been in our family for 35 years and I have never had a moose walk on our back deck. It took me a couple glances to figure out what in the world I was looking at. One thing is for sure it's never dull around here, ever!

I've had a sick baby at my house as well, finally on the mend, but I know how you feel!

I'm not sure if I could do nuts on my pizza, but I'd be willing to give it a try!

Amy! I will be in your round robin you know! I'll give it a shout out too. Now that I can see straight and my nose doesn't hurt anymore.

S&S-Oh do try it! So so SOOO good. I know it sounds weird but it was really fantastic! Hope the baby feels better!

I love the idea for organizing tupperware lids. I need to do something about that asap. I have tons just tossed in a drawer.

Ahhhahaha you Californians are FUNNY! Moose are a dime a dozen up here but on the deck 2 feet from the door not so much!

Man that walnut pizza sounds delicious! How come I never think of awesome flavor profiles like everybody else!?

Awesome plan on the Tupperware lids! I keep mine semi-similar in a big casserole dish I rarely use. But mine end up laying flat instead of standing up like yours so it's still kind of a search. I really need to find a way to organize my PAN lids. My mom has this little stand thing hers slide into, but ours doesn't.

I only have 3 types of tupperware (Gladware, actually) so stacking the lids is very very easy. But I like your method!

And you have reminded me that I have a jar of pesto to eat...

OMG, what a brilliant idea for the plastic lids. Totally stealing that.

How cool about the moose tracks. I've never seen a moose ... or tracks for that matter. But I'd like to. :)
