Whole Wheat Corn Bread

 Terrific turnout for my first "Just Another Meatless Monday" link up, so many great meat free meal ideas to choose from. Thanks to everybody who linked up, I'm so glad you joined in and shared. I finally got a new card reader now if I just keep Jack someone from crushing it to death we'll be in business!

I have been battling dislocated ribs this last week, each breath a fire in my back. I think it's actually in control now but for a few days my poor kids tiptoed around because mama was kind of snarly. Lot's of heat, ice, rest, stretching, chiropractic care and a few well timed muscle relaxers came together today and I am relatively pain free now. Wow pain free is nice. Also my husband has been working crazy long hours at work, after work, weekends, or whenever!. To say it's been a stressful week to 10 days is a bit of an understatement. It's going to be better very soon.

I made a huge pot of bean soup on Saturday. I don't think there is any thing as pleasant cooking on a cold day as bean soup. The soup was great, nothing spectacular just a basic bean with bacon. I do add a scoop of pumpkin puree to it. It gives it a nice color and adds a nice earthy background note, too.

We did whip up a batch of egg-less whole wheat corn bread. The youngest and I made it while Union whistled for us. Then we read for a bit until the bread came out of the oven. It was a perfect lunch the next day too.


Whole Wheat Corn Bread-oven 400˚
1 cup corn meal
1 cup whole wheat flour
1/3 cup of sugar-I used less and would have used honey but was out-anybody know a bee keeper in the Matanuska Valley?
1 teaspoon of baking powder
1 teaspoon of salt
1 egg beaten- OR substitute 3 TBS water+1 TBS flax meal
1 cup milk
1/4 cup of olive oil-used less! about half that

 grease an 8x8 pan
Mix the dry ingredients
mix the wet ingredients
add the wet to the dry and stir it in but don't over mix
pour into pan and bake 20-25 minutes or until a toothpick comes out clean

 This is really great recipe, nice flavor and
the kids really liked it, we all did in fact.

Congrats to Simply Life!

Mmm that corn bread looks delicious. My mom used to get the little boxes of the Jiffy corn mix and we'd have them a couple nights a week w/ dinner. I haven't eaten corn bread in forever, I need to get back in the habit b/c I love it so much!

This is a nice change from the regular cornbread. I like it. This one is definitely worth a try.

Oh, swoon, cornbread is one of my most favorite things! I've always wanted to try making it with whole wheat flour ... but was worried the texture would be weird. Yours doesn't look weird at all, it looks yummy!

Oooo cool pins! You did a great job. I'm intrigued by the egg substitute with water and flax. Of course I just used the last of the flax that *I* have in the granola I have in the oven, but I need to head to the co-op tomorrow to buy more bulk parsley, whole wheat flour, etc anyway :)
