We have cut back on our consumption of meat so much these days that it feels like a treat when we do eat it. We were entirely vegetarian for almost a week with the exception of this beautiful stuffed pork loin:
It's actually a rather quick fix too, once stuffed it cooks for about 2 hours and voila impressive rolled roast. To prepare for stuffing I butterflied about a 1 1/2 pound pork loin before freezing, then it was only a matter of thawing, stuffing and baking.
Stuffed Pork Loin--oven 350˚
one butterflied pork loin about 1 1/2 pounds
2 cups rough chopped kale, make sure to remove the stems first
3/4 quarters cup of feta
salt and pepper
1 cup panko bread crumbs
lay the roast out flat on a sheet of waxed paper
sprinkle with salt and pepper
sprinkle kale over the roast, press down to control the kale
layer the feta over the kale
starting at the short end roll the roast poking the kale back in as needed
once rolled secure with several tooth picks and set to the edge of the waxed paper
pour the panko on the paper, sprinkle with salt and pepper
roll the roast in the crumbs, make sure the ends are covered too
place in a baking dish bake for 1 2/2 -2 hours at 350˚
Again a beautiful and surprisingly easy dinner to make.

I know what you mean about having meat as a treat! I have never stuffed a porkloin...but your looks so yummy I just might!
That looks fabulous. I rarely prepare meat at home anymore but I may have to try that.
When this picture popped up on my reader I said "Holy F***!" Beautiful Laura!! Nicely done! Pork scares the living daylights out of me, so I usually cook it in the slow cooker. But you have inspired me to go dig around the freezer and see if I have a loin laying around!
