Double Decker Banana Bread

Need I really say more? Ok Ok I will, one layer of regular banana bread batter and a second layer of chocolate banana bread batter, baked together to form a two layered loaf of lusciousness.  My kids loved this, we all loved it. Even Hero, who has moved out, keeps coming over and grabbing slices.

Yes, my oldest son has moved out. I'm torn. I have to say that the last year has been really tough and the atmosphere not so pleasant around here, he felt pinned down and longed for freedom. And this made him cranky a lot of the time and not nice to be around. We expected him to pay his insurance while other friends had everything given to them therefore we sucked. So when a group of four boys were offered a friends parents house to rent I didn't say no, the relief was palpable. It's very close to our house, all the boys work full time and are for the most part good kids. If he wants to try he can but I think he'll soon find out that it is not easy and a measly insurance payment was the least of his troubles. But live and learn. My baby is gone! So that's that.



Double Decker Banana Bread-oven 375˚

3 1/2 cups flour-I use whole wheat pastry flour
1/2-3/4 cups sugar-use less sucanat or evaporated cane juice
2 teaspoons baking soda
1 teaspoon ground cinnamon
4 over ripe bananas
1 1/2 cups soured milk-add 1 TBSP vinegar to milk to sour it
3 eggs
1/2 cups oil or melted butter
1/3 cup cocoa powder

grease and flour two loaf pans
pre-heat oven
mix the dry ingredients in a large mixing bowl
then mash the bananas together with the wet ingredients
add the wet ingredients to the dry and quickly stir together, don't over mix or it will be tough
pour a quarter or so of the batter in to each loaf pan
add the cocoa power to the remaining batter, stir lightly together
split between the two pans making sure to spread to the edges or it will sink to the middle, experience speaking there
bake at 375˚ for 40-50 minutes or until loaves are set and a test stick comes out without batter on it
cool slightly then remove from the pan
wrap soon after in plastic wrap to keep the moisture in
cut the second day for best flavor

This one sunk in the middle but we already ate the other loaf so I can't show you how well it turned out! Even though this one isn't nice looking it was still fantastic.

Oh yum this looks delicious!! I just made two loaves of "normal" banana bread last night!

Good luck to Hero! I'm glad you expected him to pay insurance - that's what parenting is all about. He'll never learn anything or go into life prepared if you had handed everything to him. He might be crabby now, but believe me - in a few years he will take notice and thank you - I know my brother and I feel the same way towards my mom now.

Hero's old enough to make his own choices. If freedom is what he wants then he has to acceot what comes with it. He'll be fine and since he lives so close you can still see him, even if he's just coming over to rob your baked goods :-)

This bread looks good to me. It may not be double decker, but it looks marbled to me, which is just as pretty.

We made our kids buy their own auto insurance when they lived at home too...they also thought we were bad parents lol......now that they have children approaching driving age, they are requiring THEIR children to buy their OWN insurance...they (our adult kids) finally "get it" and we aren't the bad guys anymore, so hang in there.
