
Wondering what to do with the turnips you might have to thin out from your gardens? Or what to do with fresh turnip greens? Or just plain old turnips with their greens attached? Or any other greens you need to use up? Why this question so late in the growing season? Well we are having a truly rainy Alaskan summer and greens are abundant! We eat greens in everything these days. My kids have even given up whining about greens, probably the only veggies they try NOT to eat, we eat them so much.
Faced with a fridge full turnips and their attached greens I knew I had to make something that would use a lot of greens and fast. The kids were feasting on leftover fresh potato and fresh greens soup and there wasn't enough to go around. So I whipped up this spicy and hot greens dish.
Spicy Hot Greens
2 large hand fulls of turnip greens
1 TBSP oil
1 inch chunk of ginger, peeled and minced
2 cloves garlic, minced
1/4 teaspoon curry powder
pinch of red pepper flakes
2 TBSP soy sauce
2 turnips, peeled and cut into matchsticks
wash the greens, shake off extra water, don't dry completely
chop them in to 1 inch pieces, stems and greens both
heat a skillet over medium heat
when hot add the greens, stir them until they are bright green and the greens are wilted
remove from heat and increase heat to medium high
put the greens in a bowl to use later
add the oil to the skillet and put it back on the heat
when the oil is hot add the ginger, garlic, curry powder and pepper flakes
fry quickly until they are fragrant
add the soy sauce and greens to the pan
stir until well mixed
remove from heat
serve hot topped with the cold cut turnips
