Roasted Cauliflower Soup

Wow I can't stop thinking about this soup, it was so good! Thick with pieces of roasted cauliflower and a pureed cauliflower base it was the perfect dinner for yet another freaky, weird, cloudy, rainy, sunny day. Yeah it's been one of those summers and no one is taking it very well.

Except me, I don't mind I haven't had to water a garden in about forever and a day. And with all the time I want to put in to the new school I feel like the less sunny days I'm inside the better. One more good thing about this weather and then I'll stop, it makes you drop everything and just run outside at the first sign of sunshine. Appreciation is well taught by Alaskan summers.

And speaking of the new school it is beautiful. We are incredibly blessed to be moving in to such an amazing building. Honestly we were figuring on a bunch of portables surrounding a common deck so a real building is way way above and beyond our wildest dreams. The builder Scott Johanson of Criterion General has been instrumental in our schools success. The building is an asset to our school with 14 acres of wild lands surrounding it they were a real draw for some families tired of 30 minutes of fresh air a day. I know those 14 acres may not always be wild but for now they will be enjoyed. If I can remember to take pictures I will but my mind is usually going in about 50 different directions when I'm there.

Alright back to soup!

Roasted Cauliflower Soup oven 400˚

1&1/2 heads of fresh cauliflower
2 TBSP oil
1 tsp salt
1 TBSP butter
1/2 medium onion, chopped
1 clove of garlic, minced
1 tsp of curry powder-more to taste
6 cups of vegetable broth or water
1&1/2 cups of milk

break or cut cauliflower in to about 2 inch pieces
toss them in a 9x13 baking dish with the oil and sprinkle with salt
roast at 400˚ for about 1/2 hour or until done to your liking, I like mine slightly browned and not soft all the way through, al dente?
meanwhile melt the butter in a dutch oven over medium heat
add the onion and cook for five minutes or so
throw in the garlic and the curry powder, stir 30 seconds or so until the curry powder is extremely fragrant
add the broth/water and bring to a boil then reduce heat to very low and wait for the cauliflower to get done roasting
when it's done divide it roughly in half and add it to the soup, bring it up to simmer
while the soup comes up to heat gently break the remaining cauliflower in to bite sized pieces and set aside
when the soup is simmering use an immersion blender to puree it, you can make it as smooth as you like, but be careful an immersion blender can throw soup out of the pot!
add the rest of pieces of cauliflower but don't puree them leave them as bites
when they are fully incorporated add the milk and stir until the soup is warmed through but not boiling



My kids loved this soup. LOVED. So it is definitely on the list to be made again soon. If I know Alaska she'll give us another soup day as soon as possible, perhaps even too soon.

I love me some roasted cauliflower, so I am going to save this recipe and bring it out for a rainy day.

I bet using purple and while cauliflower would be awesomely funky.
