Filled Banana Bread

We buy bananas out of habit, we rarely eat them when they are yellow so we end up eating a lot of banana bread. I prefer the old fashioned cup 'o melted butter recipe myself although that's not doing my thighs any favors, you know? So I make a less artery clogging recipe which also has a bit less taste which of course means it a bit less tasty and the final result is sometimes we give a lot of banana bread to some very lucky chickens. I am currently working on a flavorful, non-frankenfood banana bread recipe and my family hopes I get it done soon. Me too.

I did come up with a great way to change up the banana bread scene though. Raspberry jam. I made a variation of this new recipe I'm tweaking the other day. Then I used a butter knife and cut the batter right down the center and pushed it back a bit. I quickly scooped up some raspberry jam and poured it in the trench I had made. Then I baked them as usual. They came out perfectly delicious and a great way to perk up a lower sugar, lower fat quick bread.

My banana bread recipe (on my blog) doesn't have any butter in it and I think it's mighty damn tasty! Has 3 Tbsp oil.

The butter vs. oil in the bread is one of those highly contested topics. But the jam inside is a new one. Hmmmm, this would be wonderful with Nutella too...

This looks SO good, love that jam filled 'trench'.

This would be perfect for breakfast with an ice cold glass of milk.
