Need another reason to make them? OK, they feature your homemade jam nestled in the middle, they make a small batch that can be easily quadrupled and damn, they are tasty. There, everything about these cookies says make them immediately, why are you still reading this. Oh ha! you want the recipe.
Thumbprint Cookies
1/2 cup of butter
1/4 cup brown sugar
1 egg, separated
1 teaspoon vanilla
1 cup flour or whole wheat flour
1/4 teaspoon salt
3/4 cup chopped walnuts
preheat oven to 350˚
cream the butter and sugar
add egg yolk and the vanilla beat well
stir in the flour and salt
beat the egg white until frothy, set aside
pour nuts into a flat saucer and set aside also
roll the dough into one inch balls
then roll each one in the egg white
and then in the nuts
poke your thumb in the middle to make a thumbprint
bake for 10-12 minutes
when they begin to brown a bit take them out and let them cool two minutes on the sheet
then remove to a cooling rack
once cooled completely you can pack them away unfilled in the freezer for up to a month
or
fill each thumbprint with jelly of your choice, once filled keep them chilled or eat them pretty quick
also these don't spread much so you can fit a lot on the cookie sheet
