Cranberry Orange Cake and Winners



I still had a bag of cranberries languishing in the fridge from a failed cranberry popcorn stringing plan at Christmas, dang they do last! I decided to use them before they crawled off on their own. I'm joking, they were still perfectly crisp and beautiful. I couldn't get the orange cranberry upside down cake off my mind so I decided to have a wee bit of fun and and make a simpler, bigger cake. Same basic cake batter, different technique, bigger pan. Uhh yum!

Cranberry Orange Cake--oven 350˚

2 whole cutie mandarin oranges, well washed
12 ounce bag of fresh cranberries
1 cup butter, softened
2 cups sugar, divided
4 egg yolks, you'll need the whites too
3 1/4 cups flour
1 TBSP baking powder
1 teaspoon salt
1 cup milk
4 egg whites
glaze
1 cutie mandarin orange
powdered sugar


grease a 9x13 baking pan and set aside

in the bowl of a food processor chop the whole bag of cranberries, pulse about 8-10 times
pour into a mixing bowl and set aside
peel both cuties and place the peel AND the fruit in the processor, pulse until the skin is finely chopped
add to the cranberries
sprinkle with 1/2 cup of sugar, stir and set aside
beat the remaining sugar and eggs until well creamed
add the egg yolks 1 at a time and beat well after each yolk
in a small bowl sift the flour, baking powder and salt together
whisk the egg whites until frothy, set aside
add the flour and the milk alternately to the sugar mixture
mixing quickly after each addition
add the egg whites
add the cranberries
mix well and pour into the greased 9x13 pan
bake for 40-45 minutes until a toothpick comes out clean
cool for 20 minutes
juice the remaining cutie and mix with enough powdered sugar to produce a glaze
poke the cake gently all over the top and pour the glaze over
this cake tastes best the next day



Yes it really does use two whole cuties with the peel, their pith is not bitter! This is an awesome discovery for me, because to be honest zesting a cutie is a total PAIN. Again not a super sweet cake but a very refreshing change up.
