Red Lentil Cauliflower Stew

We've got wind my friends, about 50 miles an hour with 75 mile an hour gusts. On these cold winter days I love to make something that will welcome my husband home for lunch and make him glad he made the five minute drive. We ARE blessed he works so close to home and yes in the warmer months he usually rides his bike. My husband loves what he calls happy curry tummy, usually acquired by eating, yes, you guessed it, curry. He likes it HOT, he likes it mild, he likes it with potatoes, he likes it Thai, he likes it green. The man just likes curry plain and simple so when I want to make his day, I make anything curry, happy curry tummy.  Yesterday was a lentil, cauliflower, green pea curry stew, perfect for a cold wind swept day in winter.

Red Lentil Cauliflower Stew
3 TBSP cooking oil
1/4 of a medium onion, chopped
2 gloves of garlic, minced and then crushed
2 medium potatoes, scrubbed and cut to bite size--I left the skin on
2 quarts water
1 1/2 cups red lentils
1/2 head of cauliflower, washed and chopped to bite size
1 cup or more frozen green peas
2 tsp. curry powder--more or less to taste
2 tsp salt-more as needed
pepper as needed--I love black pepper so I pepper my bowl heavily

in a 4 quart dutch oven heat the oil over medium high heat
add the onion and cook for 5 minutes
add the garlic and potatoes, saute for 2-3 minutes
add the water, lentils, cauliflower, peas, curry powder and salt
bring to a boil, reduce heat and simmer for 25-30 minutes
taste for salt and pepper add as needed

when the air quality is so bad recess is canceled, ok kids would probably slide away too, what do we do after school? 



Whittle. 

 Indoors. Sometimes with paring knives if we have to.

I'm not a big fan of curry, but I do like the sound of this soup and Happy Curry Tummy!

75mph wind definitely sounds like the kids would get blown away! haha

My brother and I, on rainy days and hurricans, would usually resort to our imagination stuck inside. We LOVED making up our own board games (complete with little cards, game pieces, and rules), crafts, Legos, etc. We had cable and we had TV, but I rarely remember us watching except maybe 30 minutes before bed and Saturday morning cartoons. We loved to play!
