Peanut Peanut Butter Cookies

These little mini cookies are about the best darn 2 bites of cookie you'll ever toss down. The recipe is old, passed down by a family friend but updated by me to exclude crisco (blarf). My dad LOVED these peanut butter cookies, he would eat them for breakfast dipped in coffee. Try it sometime, it's fabulous, we were only allowed to have coffee for dipping these cookies in when I was little.

Peanut Peanut Butter Cookies--oven 350˚

1 cup butter, softened
1 1/2 cups sugar
2 TBSP molasses
1 cup peanut butter
2 eggs
2 TBSP almond extract
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
3/4 cup of dry roasted unsalted peanuts

cream the butter, sugar and the molasses
cream in the peanut butter
beat in the eggs and the almond extract
mix the dry ingredients stir into the butter mixture
add the whole peanut stir to combine
drop by large teaspoons on a cookie sheet
bake for 7-9 minutes in a 350˚ oven
let them rest on the cookie sheet for 2-3 minutes after baking
bigger cookies will take longer to bake



These are my 'go to' cookies, I used to make them with chocolate chips, but #2 son Union 'doesn't like chocolate' yeah I don't know where he came from, seriously. Hero used to make them and sell them at the end of our driveway. They are easy, dependable and good. Easy enough for a 9 year old to make and sell on his own.

I love adding whole peanuts to my peanut butter cookies! Nuts rule. And I'm w/ Union - chocolate isn't a favorite! :P

I am a peanut butter cookie addict. Especially with a chocolate kiss on top. I will give your recipe a try in the near future.
