Salted Chocolate Shortbread




Let's all say a nice big to HI! to the newest member of the ultimate evil club, Salted Chocolate Shortbread. This tender chocolate cookie is a sleeper hit. You don't expect it to be so yummy but then you can't stop eating it. It's not a super sweet cookie, it's tender and melts in your mouth though and leaves you quite surprised at it's flavor. I'm thinking the office staff at the school will get a plate of these on Valentines Day, there's no school but they have to work. What better way to say thanks and we love you than the newest Ultimate Evil?

The recipe for salted chocolate shortbread is one I've been thinking about for a while and finally got around to making. Glad I did, it's simple, quick and has just five ingredients. I was planning on making it a base for other goodies BUT it turned out so well I don't really think it needs toppings and such. Plain and simple goodness in a chocolate cookie.



Salted Chocolate Shortbread--oven 325˚

1 cup cold butter
1 3/4 cups flour
1/4 cup cocoa powder
1/2 cup sugar
3/4 teaspoon sea salt

cut the butter into chunks, set aside
add the rest of the ingredients to the bowl of a food processor or stand mixer
whirl the dry ingredients
add the butter
process or mix all the ingredients
in the processor the mixture will come together much more quickly, it will still be crumbly
in the mixer the dough will take longer and be very crumbly
either way make sure there are no big chunks of butter left
press into an 11x7 baking pan
bake in a 325˚ oven for 20-25 minutes, they will be soft but will firm up after cooling
cool in the pan then cut and serve
store flat


Our house is all about sweets this week with birthdays and valentines day all rolled up together. I can promise you we are eating good healthy solid meals to offset the yearly goodies indulgence. Oh and sweet boys and their gigantic yellow lab too.

This is the second blog that I've read featuring chocolate with salt. I really want one of these cookies...NOW! :) Thanks for posting the recipes, I've bookmarked and will give it a go sometime soon. PS: Lovely picture of your son and dog. Awww.
