I met a friend for coffee yesterday, somehow we both managed to escape from home without kids at the same time. She was just fresh in from doing her grocery shopping and we were chatting about food, kids lunches and things we were going to make for their lunches. OK that's a lie, she was telling me about what SHE was going to make, I sat there realizing I needed to step up my game and try some new things for lunches. I came home ready to make granola bars, only to find no butter, no dried fruit, no oatmeal, joke's on me right? Wrong.
I scrounged up a cup of oatmeal and went from there. What I came up with was a pretty damn tasty vegan (no butter) gluten free( GF oats) sweet n salty granola. Then I ruined it by adding a dash more salt only to have the lid fall off and dump a cup of salt into on end of the pan. I did salvage 1/2 the pan, and it was so good it's already gone. So much for new foods for lunches, but tomorrow is another day right? And sooner or later I'll get more butter and oatmeal too.
Sweet and Salty Granola--oven 325˚
1 cup oatmeal(GF for gluten free folks)
1 cup millet
1/2 golden flax meal
2 cups pecans or other nuts
1/3 cup of honey
1/4 olive oil, light flavor if you have it
1 tsp salt plus extra to sprinkle on at the end
1/4 cup sugar
mix the oatmeal, millet, flax meal and nuts in a 11x7 baking dish
in a small sauce pan over medium heat warm the honey and the oil together you don't want it to boil just get warmed together
pour it over the oatmeal mixture in the pan and stir to combine
sprinkle the salt evenly over the top
bake for 20 minutes stirring every 5 minutes
when it's done remove it from the oven and sprinkle the 1/4 cup of sugar over the top and a small sprinkle of salt if desired
cool and keep away from teenagers of you want it to last

Shame about the salt - I hate when that happens. Once I ruined a homemade pizza by trying to sprinkle a dash of dried basil over it. The top came off and the entire container of basil shot out onto the pizza. We scraped off as much as we could - but wow that's a strong flavor when there's too much!!
