I still have to cook

There was a tremendous response to my post yesterday, privately, on facebook and here. Thanks for your kind words. It helps me when I write things here, I understand them better after writing a post, I gain powerful insight into what's going on and I sometimes get a view from outside my own blinders. My friend Luna wrote a piece inspired by what is going on with my son and I have to say I am completely taken aback. Not about what she wrote per se but more about the feelings she had being almost squarely in my sons shoes as a teenager. What an eye opener, I have a whole new perspective.

Yet being sad and confused are certainly no reason to quit eating, in fact quite the opposite sometimes. Not that I'd know ANYTHING about that. I made this marmalade salmon dish the other day, it was delicious and easy. This is the time of year when we've had about as much salmon as we can stand, we're done with salmon and we need to finish what's in the freezer. I guess this is my pantry clean out mission for the week, salmon. Everywhere else people probably don't have this problem but we do, too much salmon, or so it feels in March after a winter of salmon.

Marmalade Glazed Salmon-oven 375˚

ingredients
1 pound salmon fillets
1 cup marmalade
fresh ground black pepper

preheat your oven
wash and pat the salmon dry
place in a 9x13 baking pan skin side down
evenly spoon half the marmalade over the top of the salmon
bake for 10 minutes
spoon the rest of the marmalade over the salmon and grind the pepper over it
continue cooking until done, depending on thickness 5-10 minutes more
fish will flake easily when done


As you can see my marmalade was homemade with big thick slices of orange but really any marmalade will do the trick.

I have several jars of pineapple jam that I'd like to use...great idea to pair salmon with fruit.

So sorry about your son. I wish I had some words of wisdom to pass along but I don't.

Tough love isn't easy for the one who has to do it.

I just read yesterdays post. Very tough. I also say, go to his graduation. I think it will show that you care and he probably needs that. Teenagers are hard to figure out, they don't have it figured out and that's the problem. He doesn't need to hear how he hurt you, he just needs to know that you are there for him, by going, you will SHOW him that you are there.

Food looks good too!
