Anyway back to nut butters, my five year old kitchen helper Mr. SirPrize has been bugging me to make our own peanut butter for a while. And some jerk, ahem, kept eating ALL the peanuts. Sheesh. I finally bought more and we quickly made some peanut butter before she ate all the peanuts again. It was really quick and easy to make. But now I know why peanut butter is so high in calories, 1/2 cup of nuts made very little peanut butter, just enough for a sandwich and a couple of tasting nibbles.
While Mr. SirPrize ate his hard won sandwich I went on to play with some pecans in the food processor. Oh. My. I know why they don't market pecan butter because seriously people would harm each other for it. So very tasty, so very dangerous. I snapped a quick photo, snarfed some down then plopped it back in the food processor for something even more delicious and evil. I added cocoa powder and a sprinkle of sugar and suddenly, pecan nutella. Pecan nutella which I proceeded to eat with my back to a small child so I wouldn't have to share with him. That's normal right? We all do that right?
Basic Nut Butter Recipe
1/2 cup of nuts, your choice mix various nuts like walnuts, pecans, almonds
1/2 teaspoon of very good mild tasting oil
salt if desired
toast the nuts if desired by gently browning them in a dry frying pan over medium heat
let them cool
in the bowl of a food processor process the nuts with a drizzle of the oil, it really only takes a few drops
scrape down the bowl and process again
repeat two more times, add more oil as needed to make a more spreadable butter
add salt here if desired, process once more to blend it in
use right away or store in the fridge for two days

So as you can see there are NO pictures of the pecan nutella because I ate the evidence and chances are hopefully I will NOT be making it again soon. I know my limits and that is why somethings can not live in my home, like nutella and pita chips.

I think the standard of peanut butter is probably due to price. I can buy a whole jug of roasted peanuts for like $1.99, but a baking size bag of walnuts is like $8!!
I've always been curious about pecan butter b/c that's my favorite of the nuts. I would definitely eat it w/ my back to a small child, too.
