Last week I made the most fabulous crock pot/slow cooker vegetarian tortilla soup. A confession, it was ugly, most tortilla soups are so I didn't bother with pictures. Dang it was good though, and being made in the crock pot while I was out and about meant it was easy too. Double win!
Here's the recipe:
Crock Pot Vegetarian Tortilla Soup
1 pound dry pinto beans
2 quarts water
1 clove of garlic minced-use onion or chives too
2 tsp cumin
1/2 tsp chili powder
2 quarts water

1 cup salsa
1 can hominy, drained
salt and pepper to taste
2 large flour tortillas
1 cup corn tortilla chips, slightly crushed
wash the beans, pick them over for funky ones and small rocks
pour them into the crock pot, add the water, garlic, cumin and chili powder
cook on high for 4-6 hours or low for 8
one hour before serving mash the beans lightly wish a potato masher
add the salsa and hominy
taste for salt and pepper, add as needed
if the soup seems too thick add a small amount of water, this can happen if the crock pot vents steam proficiently or the lid doesn't fit properly
tear the tortillas into bite sized pieces and stir them into the soup
turn the heat to low or warm and let rest for an hour or so to meld the flavors
serve with a sprinkle of crushed tortilla chips on top
