Roasted Corn with Basil Garlic Compound Butter

We got some fresh corn today, except in Alaska fresh corn is not SO fresh but it was sweet and better than frozen. If you have abundant sweet corn and are looking for a new twist on fresh corn this might be a pleasant surprise for you. If you live in Alaska and never have truly fresh corn and want to change up the corn we do get, then you'll love this easy to make recipe too. And because I flamed my grill the other day I made this in my oven on broil but you can easily roast it on the grill, you know if you didn't catch an entire pig leg on fire, that is.

A compound butter is simply butter mashed up with other tasty ingredients, chilled and usually served with dinner. You can use it where ever you might use butter as a topping, like vegetables, potatoes or bread. In this recipe I roasted corn rubbed with compound butter and then served it on the side to be used as needed. HELLO flavor.




Roasted Corn with Basil Garlic Compound Butter --oven high broil or medium high heat on grill

8 ears of fresh corn peeled and cleaned
Basil Garlic compound butter--recipe below
salt and pepper

preheat oven or grill
for oven line a baking sheet with foil
rub a spoonful of butter over each ear of corn
place on baking sheet and sprinkle with salt and pepper
broil under broiler for 8-10 minutes turning several times to heat evenly--I like mine slightly crispy feel free to cook it to your likeness
for the grill, cook turning often to keep from burning and to cook evenly
remove from heat and serve on a platter with the rest of the Basil Garlic butter


Basil Garlic Compound Butter
1/2 cup good sweet butter
1/4 cup basil
2 garlic cloves
pinch of salt


let the butter come to room temperature
then cut it into pieces into a mixing bowl
wash and dry basil

snip the basil over the top
crush, peel and mince the garlic
add to the butter
add a pinch of salt
using a potato masher mash the butter and herbs together, I ended up using my hands
form into a ball or stick of butter and refrigerate for at least 30 minutes


Hooboy, I know how we're eating corn from now on, heck we might even be able to get frozen corn to taste good. And if any sweet kind soul wants to send me fresh sweet corn I would not object. HA! Enjoy your seasonal treats and I'll enjoy my salmon, well until about mid-February that is.
