
My mom actually discovered this recipe years and years ago in an Alaskan cookbook by Gorden Nelson called Lowbush Moose. It was a happy family favorite for years and then I grew up moved out and completely forgot about them until I came across Lowbush Moose in my cookbook shelves and decided to make Eggs Wasilla.
A word to the wise, generously grease small oven proof bowls to bake Eggs Wasilla in. Don't not rely on the the generous greasing of a baking sheet to make these work. I found out the hard. Well actually I used foil under mine so I simply cut the foil apart and served them on the foil after I realized there was NO WAY IN HELL I could chisel them off the foil. I would like to have used my parchment paper but someone, who shall remain nameless, used it for pirate treasure maps. So the point of this paragraph is ignore my picture and bake these in oven proof bowls.
Eggs Wasilla

6 oven proof bowls
butter for greasing bowls
6 cups leftover mashed potatoes
6 eggs
salt and pepper
2 TBSP grated cheese, optional if desired
preheat oven to 350˚
generously grease oven proof bowls
divide the potatoes equally between them
use a buttered spoon to make an indent in the center of each bowl
break and egg into each bowl
sprinkle with salt and pepper
place on a baking sheet and bake in the pre-heated oven for 20 minutes
remove from the oven and sprinkle with grated cheese if desired
Yes they sound so so simple and they are, but there is something about them that is so comforting too. I think the entire family really like them. I'm also pretty sure that feta over the top would be an amazing choice.Whatever you do(say it with me now) bake them in small oven proof bowls.

I forgot about these too, thank you for the reminder!! I beat the "sticking" problem by greasing the bowl and laying a piece of thin deli ham under the potatoes...they come out really easy.
