What to do with two beets, yes TWO. They came in my vegetable box last week, I was determined to use them creatively. I combed my bookmarked recipes but none of them were new and exciting to me I had a borscht I needed to try and roasted beets are always good but with only two it's hard to feed the family. So I turned to the internet to peruse beet recipes. I soon came across a grated raw beet salad that sounded promising. I tweaked it to use what I had on hand, and I fully expect you to do the same.
It turned out to be wonderfully delicious and a real change to the normal winter dishes we were eating. Full of vibrant color and packing a real nutritional wallop this salad, as a friend of mine who owns The Red Beet says, "will make your liver sing". It made my mouth sing and my boys liked it for other reasons like the biological properties it has....
Grated Raw Beet Salad with Citrus Dressing
*a food processor with a grating blade makes this salad so easy to prepare*
1 pound raw organic beets
4 stalks organic celery
1/4 teaspoon grated ginger root
juice of one orange
1 TBSP lemon juice
1TBSP of good live oil
pinch of sugar
1 teaspoon salt
dash of pepper
sour cream for garnish if desired
wash and peel the beets with vegetable peeler, this wasn't as messy as I first thought it would be just don't wear white and you should be fine
put the grate blade on your food processor and grate the beets, empty the beets into a bowl
wash the celery, trim off any spots and grate the celery too, mix into the beets
in a jar with a tight fitting lid mix the remaining ingredients except for the sour cream
pour over the beet and celery mix, turn to coat and then refrigerate for at least 1/2 an hour but overnight really makes it fantastic, it doesn't lose it's crunch either

Great minds think alike! Hi Laura - it's Megan. I bought your pan of brownies tonight at Tisha's benefit. I saw you have a blog too (we apparently have a lot in common). I must confess... your brownies look fabulous, but I can't have them, I am gluten free, so the folks at church tomorrow are certainly in for a yummy treat! I really wanted your brownies for the Le Creuset pan! I've wanted a Le Creuset anything for a long time now - I'm glad it came from you! You can rest assured it went to a very good home!
