Just Another Meatless Monday




Hey What's For Dinner


 Now I remember why I love a good veggie box, it pushes me out of my comfort zone and makes me use what's in the box. So far this week we've had raw beet salad, hot potato salad, fresh lettuce with everything, carrots and cucumbers sliced and raw, and I'm planning to make my famous vegetarian cabbage rolls soon. So many vegetables to choose from and use before they go bad, it's almost like a game "what will I make to use that up?"

Luckily the produce from Full Circle is fresh and lovely and going bad quickly doesn't seem to be a problem. The last two boxes we sampled were a Garden size box, for our next two boxes we're going to try out the Harvest size and see how that suits us. Looking at the comparison chart I think we'll use up the Harvest size just fine, of course you'll be the first to know if we have trouble. For the record I received a credit to try out the new size boxes of organic produce from Full Circle themselves, you know if ANYBODY was wondering.



Braised Winter Greens
1/2 cup pecans
1 pound of mixed winter greens, mostly kale and chard
1 Tablespoon good oil
1 teaspoon minced garlic or garlic granules
1/4 cup water
pinch of salt


 in a large skillet toast the pecans over medium high heat, just to brown
while the pecans are toasting wash the greens, remove any thick stems and pat dry
when the pecans are toasted pour into a bowl to cool
heat the oil in the same large skillet
add the garlic and quickly pan fry it then add the greens and cook for 1-2 minutes
then add the water and cover with a lid for 2 more minutes
then stir and cook until the water is gone, if need be, and the greens are cooked but not slimy
remove to a plate add a pinch of salt and top with the toasted pecans
serve immediately

I envy your abundance of fresh veggies, but with just the two of here now, it doesn't pay for us to buy in bulk anymore (but it sure sounds like a wonderful source).

I love the organic vegetable box I get once a week - it pushes me out of my comfort zone too! Thank you for sharing this wonderful recipe for braised greens - I like the addition of the pecans.
