Bacon Green Bean Bundles would make excellent party food. Made ahead, precooked with minimal reheat time they would make plenty of people happy, and they can be picked up and eaten easily. I will say this though, make sure you don't use thick cut bacon. I used homemade bacon that I cut without a meat slicer, it didn't bend very well. And also use toothpicks to hold the bundles together, just laying them seam side down did not work too well.
Bacon Green Bean Bundles
oven 350˚
1 pound fresh green beans
12 slices of bacon
wooden tooth picks
salt and pepper
bring a pot of water big enough to blanch in of water to a boil
meanwhile clean the green beans and remove the stem end
when the water boils reduce heat slightly and and cook the beans for 90 seconds
scoop out and set to drain
now drop the bacon slices in the water and par boil for 2 minutes
scoop them out and turn off the boiling water
let the bacon cool enough to work with
line a baking sheet with foil and a cooking rack
begin wrapping the bacon around small bundles of green beans
it helps to kind of divide out the beans in before wrapping so you can make sure the bundles are the same size secure the bacon with the toothpicks and place on the baking rack
sprinkle lightly with salt and pepper
bake for 20 minutes or until the bacon is crispy
serve while still hot

VERY festive!! I usually just sautee the green beans in a little butter and add crumbed bacon, but yours looks SO much fancier!!!
