
I made this fabulous dip for our New Years Eve party the other night. It's really good and I can see it being a super bowl hit too, all the flavor of a jalapeño popper and none of the deep fat frying! I was perusing Sweet and Savory the other day and I came across this and thought "hmmmm yes party food!" and immediately added it to my list. I wish I had a picture but once the party started I put my camera away. That's probably a good thing because I don't think I could have held a camera steady anyway. Um, yes, good party!
Jalapeño Popper Dip
2 8 ounce blocks of cream cheese
1/2 cup of mayonnaise
4 ounce can of diced jalapeños
4 ounce can of diced green peppers
1 cup of shredded cheddar cheese
1/4 cup of butter
1/2 cup of bread crumbs
pre-heat the oven to 350˚
in the bowl of a stand mixer or in a mixing bowl mix the cream cheese and mayonnaise until smooth
open and drain the peppers and mix them in
add the shredded cheese and mix well
pour into a buttered casserole dish
melt the butter in a small sauce pan and mix in the bread crumbs
spread over the top of the dip
bake in a 350˚ oven for 20-25 minutes
serve hot with bread, crackers or fresh carrot chips or celery sticks
also good cold eaten with a spoon
