Menu Planning

I just realized as I laid out my produce from Full Circle the other day that looking at it en masse was a great way to meal plan. I saw so many MORE options that just unpacking it and putting it away.




I thought I'd share what I came up with for our week of eats. Wait did you catch that? A WEEK of meals from our big box of ORGANIC produce, for Alaska that's a really good deal. Supplemented with the meat we have put away and pantry essentials we are good to go

So here is my list in no particular order:

Ratatouille served over organic polenta

Dry Fried Green Beans with Spicy Pork 

Stuffed Peppers and Tamale Pie--2 in one dinner, my kids don't like stuffed peppers, bonus? we only got 2 peppers!

Spicy Beef Wraps and and Roasted Beets

Hamburgers and Hot Potato Salad

Mushroom Barley Soup Fresh Bread

lunches will have: leftovers of soup, tamale pie and hamburgers, fresh carrots, carrot apple salad,
kiwis, oranges, apples and pears

I might make more Baked Apples too.

YUM! I am envious of all that produce, I tells you. I need to do some grocery shopping soon...and use your ample archive of vegetarian recipes for some meal planning!

Thank you for the links for your recipes. I also receive a box from Full Circle and was in need of ideas for the green beans. I normally menu plan from my box but since Christmas, it hasn't happened and I needed some motivation. So thank you!!

I love your recipes and links. We also get Full Circle and I WANT to come up with a weekly menu, but never do. Grinning - and I doubt that will change any time soon. However, I do hope you share your recipes for the week again because I really liked copying yours for this week.
