Menu Planning

Er, dreaming?


 It's time to look at the most recent Full Circle Box and make a menu plan, yeah! I love a plan, makes me feel grounded and totally prepared for the next week.

Caldio-Mexican Beef Stew with the gorgeous Yukon Gold Potatoes



Tortellini Toss made with some Swiss Chard and some of the Green Beans

Butter Braised Greens with Garlic using the rest of the Swiss Chard and the Bok Choy, served with rice and Vietnamese Pork Chops

I have a WHOLE bag of lovely Tomatoes to play with, I'm going to make a HUGE Taco Salad

Roasted Cauliflower Soup for soup day!

There are some Golden Beets in a bag there you can hardly see, I plan to use a few beets I have from last week and make a roasted beet salad. It should be beautiful, I'll let you know how it comes out.


Lunches and Snacks: fresh apples, fresh pears, fresh oranges
mangos will be smoothed OR eaten raw and of course right away!
cucumber will be sliced with some carrots from last week and sent in lunches
leftover cauliflower soup will go with a boy one day
and I will use several of the tomatoes to make salsa and send chips and fresh salsa too

If I have leftover salsa I will make some Migas, man they are so good!



I think I'll try my hand at making a curd, the oranges are Cara Cara, which I think are a red orange? Anyway I think a lovely curd would be a great thing to make and eat.

If I had a plane, I'd fly up to Alaska right now and steal all your delicious looking produce:)

I'll bet orange curd would be splendid! I've only made lemon curd, which my family gobbles like it's going out of style. Amazing that you get all that fresh produce in Alaska every week, and without trekking through half of creation to do so!

Ooh - I recently made blood orange curd. The cara cara oranges would be super for that...
